Kid-Friendly Strawberry Basil Shrub Soda or “mocktail”

Yield: one mocktail
3 strawberries
4 basil leaves
1 1/2 ounces Strawberry Basil Shrub (recipe included)
soda water to finish
Muddle the strawberries and basil. Mix with shrub and strain into a Collins glass filled with ice. Finish with soda water. Garnish with a strawberry slice.
Strawberry Basil Shrub
Yield: 12 cups
8 cups strawberries
1 cup raspberries
1/3 cup fresh basil
2 cups rice vinegar
1 cup sugar
Mash strawberries and raspberries with hands to release as much juice as possible. Tear half the amount of basil and combine all the ingredients in a glass bowl. Refrigerate for two days. Strain into a saucepan, add sugar, and heat over medium heat until sugar is dissolved completely, then turn off heat. Rub remaining basil between palms to extract oils, then add the rest of the basil to the pot on the stove. Leave the basil in the pot while the mixture cools to room temperature. Strain and refrigerate.
