LAGARDE\u2019S JAIME ADAMS SHARES A BIG EASY-STYLE RECIPE<\/p>\n

\"Lagarde<\/a><\/p>\n

Chef Jamie Adams and his business partner Leonardo Moura of il Giallo opened their newest venture, Lagarde, in November. The modern restaurant, located in Chamblee, features New Orleans-inspired food such as po\u2019 boys, gumbo and other dishes influenced by Adams\u2019 mother\u2019s cooking.<\/p>\n

Here, he shares a recipe that\u2019s simple and delicious enough to feed the entire family. Don\u2019t forget to serve it with a drizzle of olive oil\u2014 Adams\u2019 father wouldn\u2019t eat the dish without it.<\/p>\n

Red Beans and Rice<\/strong>
\nServes 4-5
\n1 pound soaked red beans (Adams likes the Camellia brand)
\n1 smoked ham hock
\n1 pound Tasso ham
\n1 sweet onion, diced
\n\u00bc teaspoon cayenne pepper
\n\u00bc teaspoon Old Bay spice
\n1 teaspoon salt
\n\u00bd teaspoon fresh ground black pepper
\n1 pound cooked rice
\nExtra virgin olive oil for drizzling<\/p>\n

Place the first eight ingredients into a heavy casserole pot. Add enough water to cover the beans by 3-4 inches. Bring to a low boil and cook for 45 minutes or until the beans are tender. Serve over rice and drizzle with extra virgin olive oil.<\/p>\n
